Your New Go-to Green Goddess Salad Dressing

A few months ago, I posted a picture of most amazing salad and most amazing green goddess salad dressing it came with (insert all the heart eye emojis). I was in Florida visiting my sister, and we both were obsessing over it with each bite of our meals. I knew this was something I needed to whip up in my kitchen one of these days… so I finally made it happen!

Typical green goddess salad dressings are packed with mayonnaise and sour cream, making it an item you may not want present in your everyday meals. The dressing we tried was free of those two ingredients, which made it a much lighter and healthier alternative. Of course this restaurant would not share the recipe for their green goddess goodness with us, so I decided to do some experimenting and make my own version.

Let’s talk about the ingredients for a minute. So the tahini and ACV (apple cider vinegar) help to replace the base that is typically provided by mayo and sour cream. From recipe research I did, some people at avocado as well - so feel free to throw one of those buddies in two. I do have an avocado salad dressing recipe that I’ll send your way one of these days (hint, hint). The coconut aminos make this recipe soy free.

I’m sure you’ve heard talk about soy and may wonder is it good or is it bad?

Well, in doing a little bit of research, I found that no one really seems to know. There are some studies stating the negatives of soy and some claiming positives of soy. The one conclusive thing I did find was if you are consuming soy products, make sure they are fermented. The reason being:

  • The raw soybean contains many anti-nutrients (aka plant compounds that reduce the bodies ability to absorb essential nutrients) (1).

  • These anti-nutrients are deactivated if the soybean is fermented (soy products that are fermented are tempeh, miso, and some soy sauce) (1). To ensure you buy fermented soy sauce, be sure it says fermented or aged somewhere on the bottle. Cheap soy sauce is often times not naturally fermented, but instead chemically made.

Okay all of that to say - this green goddess dressing will rock your world. If you want to make it with soy sauce, do it. If you want to use coconut aminos, go for it!

Recipe: Green Goddess Salad Dressing

Ingredients:

  • 1/3 cup tahini

  • 1/2 cup ACV

  • 1/3 cup coconut aminos

  • 3 cloves garlic, minced

  • 3/4 cup water

  • 2 T parsley, chopped

  • 1 T lemon juice

  • 1/2 cup Olive oil

Instructions:

  1. Blend all ingredients in a blender until fully combined.

  2. Pour in a reusable glass container to save for later (it gets better with time).

  3. Add to a salad, sandwich or dip some veggies in it - it’s versatile!
